Located in Saint-Martin-Lalande, just 5 minutes from Castelnaudary—the world capital of Cassoulet—and a stone's throw from the Canal du Midi, our boutique guesthouse offers a genuine culinary journey within the warm walls of a restored 17th-century farmhouse.

What is Castelnaudary Cassoulet?

Castelnaudary cassoulet is a traditional slow-cooked French dish made with white beans, duck confit, pork and sausage. Originating from the Lauragais region in South of France, it is considered the most authentic version of cassoulet.

We share with you a dish steeped in history: the Castelnaudary Cassoulet.

Legend has it that it was born during the Hundred Years' War. The besieged inhabitants of Castelnaudary gathered all available ingredients—beans, meats, and sausages—to sustain and strengthen their defenders. The dish was so nourishing that it became the symbolic specialty of the region over the centuries.

To this day, the cassoulet is gently slow-cooked in a traditional terracotta dish called a "cassole," remaining a symbol of generosity and French terroir.

We offer a unique fixed menu, exclusively reserved for guests staying at our estate.

Dinner is served in our patio during balmy summer evenings or in our dining room for a more intimate atmosphere. The evening begins with a convivial "apéritif," the perfect way to unwind and meet fellow travelers.

  • Main Course: Traditional Cassoulet, served in its authentic "cassole" with a fresh green salad.
  • Dessert: A gourmet treat featuring ice cream and "Pruneaux à l'Armagnac" (prunes in brandy), a specialty from the nearby Gascony region.
  • Finale: Coffee or herbal tea to conclude the meal.

We prioritize local artisans and seasonal produce. Our meats are 100% French, and our beans are grown right here in the Lauragais fields. Our regional wine selection is carefully curated by our local cellar master.

Table d'Hôtes is served on specific days, upon reservation (minimum 2 people).
